In 2014, the Osteria 16 restaurant opened at Vesterbro in Copenhagen. The place was founded by friends chef Morten Kaltoft and artist Emil Alsbo. Here are no snobbish servants and press-folded napkins, but honest, Italian food served family style , so the whole table shares. Osteria 16 is modern Italian cuisine where everyone can join.
Osteria 16-Cookbook is Morten Kaltoft and Emil Alsbo's first cookbook. It contains 80 simple and original Italian dishes - distributed to antipasti, polenta, pasta, risotto, pizza, bread, dessert and classic Italian basic recipes. The starting point is few high quality ingredients and seasonal ingredients. In Osteria 16's kitchen, every ingredient can be tasted. The many light meals of the book are simple and unpretentious, but stylish and full of flavor. It's food that is easy to go to and talking to the senses.
Morten Kaltoft has previously worked at the Michelin restaurant Era Ora, and his solid experience does not deny in the easily accessible recipes. The book offers the dishes that make the restaurants popular and well -visited. For example, try raw marinated virgin lobster tails with anchovies and chili sauce , linguine with sea urchins , risotto with radicchio and red wine or lemon pie with meringue .
The pictures in osteria 16-cookbook are taken by Emil Alsbo, showing both dishes, restaurant and classic Italian market mood . The result is a cookbook at eye level and a visual diary from one of Copenhagen's most successful restaurants in recent years. Morten Kaltoft is a trained chef at ERA ORA and opened in 2004 Famo Saxogade (with former chef at Era Ora, Fabbio Mazzon). Subsequently, they opened Famo 51 and Famo Metro. Morten has won several chef awards. Emil Alsbo is an artist and has been part of the artist group phone to the boss. Emil has sold to the State Art Fund and has exhibited, among other things, at Charlottenborg and Tranen. Together they are behind Osteria 16 Haderslevgade, Spaghetteria, Osteria 16 Pesce and Osteria 16 Ravnsborggade.
